We've selected some of our favourite dishes from around the country with extra variety coming from the seasonal specials that change monthly.
Many of the dishes are cooked on the vast charcoal grill we bought from Bilbao in northern Spain. The grill provides not only a wonderfully healthy way of eating, but the sheer flavour the charcoal gives to the food simply cannot be beaten. It's flavour more than
anything that we love about most Spanish food.
For the bar we have tapas of course - the world's greatest bar food. So popular have they become, that the term has been plagiarised so you hear phrases like 'global tapas', 'Asian tapas' and so on. All very flattering to the Spanish of course, but only tapas are tapas!
